3800 Overheating

Hello all, my 96 3800 V6 Camaro overheats once in a while. It will be running fine, temps around 185 or so, then it will start to rise up to almost 260, it will sit there regardless of what I do, or how I drive, then it will just drop like a rocket back to 180 or so. It doesn't happen allot, and once it drops its usually ok.

Does this sound like a T-stat sticking or the fan relay. When it drops, it drops fast (like 5 seconds or so).
